Conventional wisdom suggests all foods should be kept in a refrigerator to maintain their freshness, but this is not always the case. To bring out the best flavor and maintain proper hygiene, some foods should be refrigerated while others are best stored at room temperature or frozen.
Mayonnaise is an example of a food that should be kept at room temperature. Mayonnaise is made from egg yolk, vegetable oil, and vinegar. At low temperatures, these ingredients separate, affecting the flavor and accelerating the spoiling process. It is best stored between 10 and 30 degrees Celsius.
Another example is tomatoes, which become dehydrated when refrigerated and lose flavor.
On the other hand, nuts should be stored in a fridge. Many people mistakenly think it is okay to store them at room temperature because they are a dry food. But at room temperature, the fungus aflatoxin, which can cause liver disease, may develop. The unsaturated fat in nuts oxidizes easily in direct sunlight, reducing flavor and nutritional value. If nuts need to be stored for a long time, it's best to freeze them.
Apples should be kept in a fridge, too. While the optimal storage temperature is between 1 and 5 degrees Celsius, they will be sweeter if kept at 0 or 1 degree below. Keep apples in a plastic bag or wrapped in newspaper to prevent dehydration. Apples release ethylene, which can accelerate the ripening of other fruits, so they are best stored separately.
