      Burdocks are harvested from January to March. These roots are low in calories (62kcal per 100g) and rich in fiber. They also contain inulin, which aids kidney function, and lignin, which has antibacterial properties.

      They are rich in calcium and potassium, which counter the effects of sodium, helping to keep blood pressure under control.

      Many people think of strawberries as a spring fruit, but in fact their harvest season runs from January until May. They are rich in potassium and vitamin C, which strengthen the immune system, as well as anti-oxidants.

      Fiber-rich, low-calorie strawberries are also a good option for those who are dieting. Ellagic acid, found in abundance in strawberries, can promote apoptosis, the healthy, programmed process of cell self-destruction without which cancer and other diseases can develop.
